Herb Crusted Baked Salmon

 

1 Tablespoon Olive Oil

¼ cup onion, chopped

1 clove garlic, minced

1/8 teaspoon salt

¼ teaspoon pepper

½ teaspoon basil

½ teaspoon parsley

½ teaspoon oregano

½ cup dry whole wheat bread crumbs

2 ½ Tablespoons fat free plain yogurt

1 teaspoon Dijon mustard

1 lb. salmon fillets (cut into 4 equal pieces)
 

Preheat the oven to 350°. Spray a baking sheet with non-fat cooking spray; set aside.

Heat oil in skillet over medium-high heat. Sauté onion and garlic until tender. Transfer to a medium bowl, and mix with bread crumbs, spices, mustard, and yogurt. If necessary add more yogurt to achieve a paste like consistency.

Place salmon fillets onto the baking sheet, and press the crumb mixture on the top of each fillet to create a crust that is about ¼ inch thick.

Bake for 10 minutes, or until salmon is easily cut with a fork, then broil for approximately 5 minutes to crisp the top.
