Salmon Pasta Salad

 

1 16 oz box whole wheat pasta, cooked and drained

1 green pepper, diced

1 red pepper, diced

1 yellow pepper, diced

1 orange pepper, diced

1 cup carrots, sliced

1 ½ cups broccoli flowerets

½ cup onion, diced

2 cloves garlic, minced

2 - 4 oz. Salmon Filets (see Salmon directions below)

Add a dressing of your choice. Fat-Free Ranch goes very well with this.

 Salmon Directions:

  • Preheat oven to 375°. Place 2 - 4 oz. Salmon Filets onto baking sheet that has been sprayed with non-fat cooking spray. Bake for 18 - 22 minutes (until filet flakes easily with a fork). Let Salmon cool in a bowl. Once it is cool, flake the filets into small pieces; add to the remaining salad ingredients.

Combine all ingredients; chill and enjoy!

Makes 12 Servings: (salad only - does not include dressing)
