Wheat Germ Muffins 

2/3 cup whole wheat biscuit mix

1/3 cup wheat germ

¼ cup sugar

1 slightly beaten egg or 1 egg equivalent of Egg Beaters

1/3 cup water

2 Tablespoons All Natural peanut butter

½ teaspoon vanilla

In mixing bowl combine biscuit mix, wheat germ and sugar. In another small bowl combine the egg, water, peanut butter, and vanilla; beat until smooth. Add egg mixture to dry ingredients, stirring just until dry ingredients are moistened (do not over mix). Spoon batter into muffin pan, filling cups 2/3 full.

Bake at 375° for 20 to 25 minutes or until golden brown.
