Healthy Tacos
1 lb. lean ground beef (96/4) 1 recipe taco seasoning or commercial taco seasoning mix 1 can fat free refried beans 3 bags Success rice, cooked and drained 2 can diced tomatoes ¼ cup chopped jalapeño peppers (I use the ones from a jar) use more if you like it really hot Ground black pepper 1/8 cup fat free ranch dressing Brown ground
beef and add seasoning mix according to package directions. Add one
can of the tomatoes, the jalapeño peppers, and ground black pepper
when the ground beef is about ¾ cooked. Continue cooking and once
ground beef is done, add the remaining ingredients (including the
1/8 cup of ranch dressing), mix well, keep on the heat for about 1
minute (just to warm everything. Serve in toasted whole wheat pita halves, with lettuce, tomato (or Eric’s Super Tomato Salad), Salsa, and either fat free ranch dressing or fat free yogurt. Makes 25 servings (Nutrition Info is for taco filling only):
