Maudell's Chinese Shrimp Teriyaki Pasta Salad

 

1 16 oz. Box Rotini whole wheat pasta

2 bags frozen sugar snap pea stir fry veggies, thawed

1 bag frozen de-veined shrimp (large size shrimp)

About 1 cup fat-free mayonnaise

About 1/2 cup teriyaki marinade (or use a bottled sauce – low sodium)
 

Cook pasta to package directions.  Place veggies in pasta strainer and pour the cooked pasta and water over to soften veggies and drain the pasta. Then rinse with cold water to chill. Rinse shrimp under cold water to defrost.  Pull tails off shrimp and pour all together into a large bowl.  Mix about the mayonnaise and teriyaki sauce in bowl until well blended (taste and adjust portions if needed).  Pour mixture over other ingredients and blend.  Chill in refrigerator until ready to serve.
