Oatmeal Fudge Peanut Butter Brownies

 

½ cup plus 2 teaspoons Oatmeal

¼ cup mashed banana (or unsweetened applesauce)

¼ cup All Natural Peanut Butter

¼ cup Splenda

¼ cup Sugar

1/3 cup Carob Powder

2 Tablespoons whole wheat flour

¼ cup honey

2 egg whites

1 teaspoon vanilla extract
 

Combine the oats, peanut butter and banana, let sit for 5 minutes. Meanwhile, combine the Splenda, sugar, carob, and flour; mix well. Add remaining ingredients to the sugar mixture and mix very well.  Add sugar mixture to oat mixture, stir until well blended. Spray an 8” square pan with non-stick cooking spray. Spread batter evenly in the pan and bake at 325° for about 2 minutes, or until the edges are firm and the center is almost set.

Cool to room temperature and cut into squares.
