Lasagna Pie
½
cup fat-free cottage cheese ¼ cup parmesan cheese 1 pound lean ground beef, cooked and crumbled 1 teaspoon oregano ½ teaspoon basil 1 can (6 oz) tomato paste ¾
cup low-fat shredded mozzarella 1 cup skim milk 2/3 cup whole wheat biscuit mix 2 egg equivalent of Egg Beaters ½ teaspoon salt ¼ teaspoon pepper
Preheat oven to 400°. Spray a 10” pie plate with fat-free cooking spray. Layer cottage cheese and parmesan in plate. Mix ground beef, oregano, basil, tomato paste, ½ cup mozzarella; spoon evenly over top. Beat milk, biscuit, eggs, salt, and pepper until smooth. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean – approximately 30 – 35 minutes. Sprinkle with remaining cheese. Let stand 5 – 10 minutes before cutting.
