Caesar Dressing
Makes 1 Gallon
4 oz Anchovies
- chopped
2 Tbl Mustard
3 Tbl Fresh
Garlic - minced
1 Tbl
Worcestershire Sauce
1 Tbl Red Wine Vinegar
2 tsp Freshly
Ground Black Pepper
3 Lemons –
squeezed to make 1 Cup juice
½ Cup Freshly
Grated Parmesan Cheese
1 tsp Tabasco
Sauce
32 oz Extra
Virgin Olive Oil
Combine all
ingredients except olive oil into blender, blend very well. Add as
much of the olive oil as you can fit into the blender and blend
again. Pour mixture into container. Blend the rest of the olive
oil into the (mostly empty) blender and then add that to the
container and stir together.
Makes 40 - one ounce
