Beef With Broccoli Lo Mein

 

3 teaspoons ground ginger

2 cloves garlic, minced

1 Tablespoon onion, minced

2 teaspoons Worcestershire sauce

1 Tablespoon brown sugar

4 Tablespoons vinegar

1 cup low-sodium soy sauce

½ cup water

1 teaspoon cornstarch

1 Tablespoon Olive Oil

¾ pound lean eye round steak, sliced into 2” slices

2 cloves garlic, minced

¼ cup onion, chopped

1 cup mushrooms, sliced

1 16 oz. bag frozen broccoli flowerets, thawed

1 can sliced water chestnuts, drained and rinsed

1 16 oz. package whole wheat fettuccini, cooked and drained


Combine first 8 ingredients and set aside. Heat olive oil over medium/high heat in large frying pan or wok. Add steak slices and sauté for 2 – 3 minutes; add garlic and onion and sauté for another couple of minutes. Add broccoli and mushrooms; cook for another 2 minutes. Add water chestnuts; mix well.

 Stir cornstarch into sauce mix; pour over beef. Cook, stirring constantly until sauce thickens slightly. Add cooked fettuccini; mix well.
