Banana Bread Cookies

 

½ cup Smart Balance Light, softened

½ cup brown sugar

1/3 cup Egg Beaters

½ teaspoon vanilla

1 cup mashed bananas (2-3 ripe bananas)

1 ½ cups whole wheat flour

1 teaspoon cinnamon

½ teaspoon baking soda

½ teaspoon salt

1 ½ cups granola

Preheat oven to 375°. Spray cookie pan with non-fat cooking spray. In bowl cream Smart Balance and sugar. Add egg, vanilla and bananas and beat until well blended. Add flour, cinnamon, baking soda, and salt; mix just until blended. Stir in granola. Drop by ½ Tablespoon about 2” apart onto pan. Use fork and press each cookie flat (or if you want a cookie that has a more chewy texture, don’t flatten). Bake for approximately 12 minutes. Cool on wire racks.

Makes 2 1/2 dozen cookies
