Salmon Florentine 1 16 oz box whole wheat pasta 1 Tablespoon Olive Oil 2 cloves Garlic, minced 2 (4 oz) Salmon Fillets 3/4 teaspoon Salt-Free Lemon Pepper seasoning 2 cans No-Salt Added Diced Tomatoes 1 - 10 oz. bag frozen Spinach, thawed 4
oz. Low-Fat Feta Cheese, crumbled
Cook pasta according to package directions (omitting the salt).
While the pasta is cooking, heat the Olive Oil over medium heat; add
garlic and sauté for 1 minute. Season the Salmon fillets with the
Lemon Pepper and add to the hot pan. Sauté on each site until tender
enough to break apart. Break Salmon into cubes; mix in the Tomatoes
and Spinach. Continue cooking until the Salmon is easily flaked with
a fork; add the Feta Cheese. Drain the pasta; add Salmon mixture,
toss and serve.
