Healthy Fried Fish
 

4 - 4 oz. Tilapia Fillets - or any other thin fish fillet

¼ cup egg whites or egg substitute

¾ cup whole-grain yellow cornmeal

1 teaspoon Lemon Pepper seasoning (salt-free)

2 Tablespoons Canola Oil

Place egg in a bowl, combine cornmeal and Lemon Pepper seasoning on a plate. Heat Canola oil to very hot (but not smoking) in a frying pan. Dip each fillet in the egg, then dredge in the cornmeal mixture. Place in hot oil and cook 1 - 3 minutes on each side, until browned and cooked through.
