Baked Macaroni and Cheese


1 – 16 oz. box whole wheat Macaroni

1 – 8 oz. container plain, fat-free yogurt

12 Multi-Grain Saltine Crackers

6 oz. low fat shredded mozzarella cheese

2/3 cup low fat shredded cheddar cheese

1 Tablespoon low fat grated parmesan cheese

Smart Balance Butter Spray


Preheat oven to 350°.

 

Cook macaroni and drain macaroni; return it to pan. Add the yogurt to the macaroni and mix well.

Spray a large casserole dish with butter flavor, non-fat cooking spray. Layer ½ the yogurt/macaroni mixture, then 3 oz. mozzarella cheese, 1/3 cup cheddar cheese, 6 crushed crackers; spray with Smart Balance. Repeat layer and top with grated parmesan.

Cover and bake for 25 minutes; remove cover and turn the broiler on for 2-3 minutes to lightly brown the top.
